WHY: Lime Lite Legacy over Half a Century Owner Brandon Smittcamp has continued the tradition into our 50th year of providing fine dining and enlightened hospitality that the Milutinovich Family preserved for decades. Brandon has added his own touches, too, to keep his prominent establishment in the “Lime Lite,” including offering new and exotic libations from the bar and farm-fresh menu treats.

Farm-to-Fork Freshness To experience Lime Lite cuisine is to enjoy fresh fruits and vegetables carefully chosen from local farms and ranches. Starting with the Smittcamp family farming operations, Brandon selects from a variety of crops at their respective peaks of the season. For example, try cooling off some hot summer day with his refreshing home-made peach ice cream.

Brandon and his staff also hand-pick from Farmers Markets and local farms with whom they have cultivated relationships over the years. Likewise, meat, poultry and fish are of the highest quality and come from local sources whenever possible.

WHY: Butterfish is a product of want and need. We created Butterfish because we were tired of searching for healthy fast-food only to come up empty-handed. The options were limited. If it was fast, it usually wasn’t healthy. If it was healthy, it often didn’t taste great. And if it was convenient, it typically wasn’t fresh. With our backgrounds in fine dining and our families’ history in farming, we knew we could do better.

We scoured the valley for the best ingredients, never settling for what was convenient or cost-effective. Quality is everything and from that starting point, we began developing our menu. Our team spent countless hours developing the sauces, which we make in-house from scratch. Each morning we break down our fish, roast our vegetables and slow cook our chicken. We make multiple batches of our rice and wontons daily. Every day we hand make our taro chips and matcha popcorn to satisfy your sweet and salty cravings. We don’t believe in shortcuts, because everything that is great requires hard work.
